Texas is a good place to go for BBQ and I was lucky today to visit Clark’s Outpost in Tioga, TX.
They do real slow-smoked cooking. I saw the machine that it’s cooking some briskets tonight, and will get them ready for tuesday (3 days at least). Each brisket looses 42% of its weight on the machine, and you don’t get any special ingredients other than smoke and time. The owner was also kind to show me inside the Kitchen where the magic happens and share his story working for this place non stop for quite a few years.
I had the Turkey breast and it just melted in my mouth, with good variety of side dishes and some live country music in the place. Texas BBQ, checked!
